Protos 27 is a wine with which Protos pays tribute to its first vintage marketed in 1927 and made exclusively with the Tinta del País grape. Protos, the first winery to settle in the Ribera del Duero Designation of Origin, has aimed from the beginning at producing quality wines, limiting yields, for example, to obtain very balanced grapes or controlling and planning the harvest based on the particularities of each of its plots. The vineyard where the grapes for Protos 27 come from is over 50 years old. In the vinification of Protos 27, the grapes were harvested manually to make a first selection of clusters in the field and 20kg boxes were used in order to treat the grapes as best as possible. Subsequently, the clusters were kept in cold rooms to preserve their aromas and enhance the fruit. Before racking and fermentation, the clusters went through a selection table where only the best ones were picked again. The fermentation of Protos 27 took place at 25ºC in 15,000-liter tanks and then the malolactic fermentation was carried out in new French oak barrels. Finally, the wine was aged for 16 months in those barrels and spent a year in the bottle before being released to the market to finish refining. This wine is a traditional wine, with velvety touches. Its origin begins with crops in approximately 60 hectares of land owned by the municipalities of Peñafiel, Manzanillo, and Olmos.
